If you're anything like me, you're currently gearing up for winter hibernation part two.
With this not so spring weather and the corona craziness, I have been fighting a bad case of the stir crazies. Being stuck in my house inspired me to get creative in the kitchen and make one last batch of soup before Spring gets here (hopefully)! Try to embrace this newfound downtime, whip up a batch of this AMAZING soup, and curl up and relax.
Ingredients:
1 Pound Ground Italian Sausage
6 Cups Chicken Broth
6 Minced Garlic Cloves
1 Large Onion, Diced
4-5 Potatoes, Diced into Cubes
1 Can Diced Tomatoes
1 Can Cannellini Beans, fully drained and rinsed
1 t Italian Seasoning
1 t Garlic Powder
1 t Onion Powder
Salt and Pepper, to taste
1/2 C Shredded Parmesan Cheese
6 oz Fresh Baby Spinach
Step One:
Place a large skillet over medium heat and drizzle with olive oil. Cook sausage in skillet until fully cooked.
Add in diced onion and minced garlic. Allow to cook with the meat for about 5 minutes or until onion starts softening and cooking into the meat.
Step Two:
In a large pot, transfer the meat/onion/garlic mixture. Add in all seasonings.
Pour the chicken broth into the pot. Add in all remaining ingredients, except for the spinach and cheese.
Step Three:
On low/medium heat, cook for 20-30 minutes, or until the potatoes have softened to your liking.
Step Four:
Add in the cheese and spinach. Allow soup to simmer on low heat until the spinach has wilted.
Step Five:
Give the soup one final stir and enjoy! Is served best with toasted, Italian bread.
